Ingredients:
- 1/2 cup unsalted butter
- 2 cups heavy cream
- 1 tsp garlic, minced (or 1/2 tsp garlic powder)
- 1 1/2 cups freshly grated Parmesan cheese
- 1/2 cup grated Romano cheese (optional for extra flavor)
- 1/4 tsp salt
- 1/4 tsp black pepper
- A pinch of nutmeg (optional)
- 1 lb fettuccine pasta (or pasta of your choice)
Instructions:
Cook the Pasta:
- Boil the fettuccine (or other pasta) according to the package instructions. Drain and set aside.
Melt the Butter:
- In a large saucepan over medium heat, melt the butter.
Add Garlic and Cream:
- Stir in the minced garlic (if using) and cook for about 1 minute until fragrant. Then, slowly add the heavy cream. Continue to stir the mixture until it’s well-combined and starts to simmer (about 5-6 minutes). Be sure not to let it boil.
Incorporate Cheese:
- Reduce the heat to low, and gradually add the Parmesan cheese, whisking constantly to melt it into the sauce. Add the Romano cheese (if using) for a richer flavor.
Season the Sauce:
- Season with salt, black pepper, and a pinch of nutmeg (optional). Continue stirring until the sauce is smooth and creamy.
Combine Pasta and Sauce:
- Toss the cooked fettuccine pasta in the Alfredo sauce until it’s well-coated.
Serve Immediately:
- Serve the Alfredo pasta while it's warm and creamy. Garnish with extra Parmesan, freshly ground black pepper, and parsley, if desired.
Tips:
- For a thinner sauce, you can add a little milk or pasta water to adjust the consistency.
- If you want a lighter version, you can substitute half-and-half for the heavy cream.
- This sauce is great with added grilled chicken, shrimp, or broccoli for a heartier meal.
