Ingredients:

4 low-carb flour tortillas (8-inch size)

1 cup marinara or pizza sauce (low sugar if preferred)

2 cups shredded mozzarella cheese

1/2 cup shredded cheddar cheese (optional, for extra cheesiness)

20 to 30 slices of pepperoni

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes (optional)

Olive oil or melted butter, for brushing

Fresh or dried parsley, for garnish
Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Warm the tortillas slightly to make them easier to roll. You can microwave them for about 15 to 20 seconds or heat them in a dry skillet briefly.
Lay each tortilla flat. Spread about 2 tablespoons of marinara sauce over the surface. Sprinkle with mozzarella and cheddar cheese. Add 4 to 5 slices of pepperoni on top.
Season each with garlic powder, onion powder, Italian seasoning, and red pepper flakes if you like a bit of heat.
Roll each tortilla tightly and place seam-side down on the prepared baking sheet. Sprinkle more shredded cheese and a couple of extra pepperoni slices on top of each roll.
Brush the tops lightly with olive oil or melted butter. Bake for 12 to 15 minutes, or until the cheese is melted and golden and the edges are crispy.
Garnish with parsley and serve hot, with additional marinara sauce on the side for dipping.

Want it crispier? Broil the tops for the last 1–2 minutes.

Try adding sautéed mushrooms, olives, or bell peppers inside for variety.
