Philly Cheesesteak Sandwich

Ingredients

For the steak:
¾ pound ribeye or sirloin steak, very thinly sliced
1 tablespoon olive oil
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
Pinch of smoked paprika (optional)
½ teaspoon Worcestershire sauce

For the vegetables:
1 tablespoon butter or olive oil
1 small yellow onion, thinly sliced
1 green bell pepper, thinly sliced
½ teaspoon salt
¼ teaspoon black pepper

For assembly:
2 hoagie rolls or sandwich rolls, split lengthwise
4 to 6 slices provolone cheese (or Cheese Whiz or American cheese)
Butter for toasting rolls (optional)

Instructions

Start by preparing the steak. If the steak isn’t already sliced, place it in the freezer for 30 to 45 minutes to firm up. This makes it easier to slice thinly. Once partially frozen, use a sharp knife to slice the meat as thinly as possible across the grain. Place the sliced steak in a bowl and season it with kosher salt, black pepper, garlic powder, onion powder, paprika, and Worcestershire sauce. Toss to coat the meat evenly and set it aside while the vegetables are cooking.

In a large skillet, heat the butter or olive oil over medium heat. Add the sliced onions and bell peppers. Sprinkle with salt and pepper and sauté, stirring occasionally, for 6 to 8 minutes or until the vegetables are soft and beginning to caramelize. Transfer the cooked vegetables to a plate and set aside.

Turn the heat to medium-high and add olive oil to the same skillet. Add the seasoned steak in an even layer. Let it cook undisturbed for about one minute to get a bit of sear, then stir and break it up with a spatula or tongs. Continue cooking for another 2 to 3 minutes until the steak is just cooked through. Return the cooked vegetables to the pan and stir them into the meat.

Lay the cheese slices evenly over the steak and vegetable mixture. Turn off the heat and cover the pan with a lid or foil. Let it sit for a minute or two to allow the cheese to melt. You can leave the cheese melted on top or stir it gently into the mixture depending on your preference.

For the rolls, you can toast them for added texture. Spread a little butter on the inside of each roll and toast them on a skillet or under the broiler until lightly golden.

To assemble, fill each toasted roll with the hot steak, cheese, and vegetable mixture. Serve immediately.

Serving suggestions

Serve with fries, chips, or a pickle on the side. You can also add optional toppings like hot sauce, banana peppers, or sautéed mushrooms depending on your taste.
