Simple Seasoned Meatball Sub Sandwich

Ingredients:

For the Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)

  • 1/3 cup breadcrumbs

  • 1/4 cup grated Parmesan

  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)

  • 2 cloves garlic, minced

  • 1 teaspoon onion powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 large egg

For the Sauce:

  • 2 cups marinara sauce (store-bought or homemade)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried basil

  • Pinch of red pepper flakes (optional)

To Assemble:

  • 4 hoagie rolls or sub buns

  • 1 1/2 cups shredded mozzarella (or provolone)

  • Olive oil or butter (for toasting)

  • Optional: grated Parmesan for topping

Instructions:

1. Make the Meatballs

  • Preheat oven to 400°F (200°C).

  • In a large bowl, combine all meatball ingredients. Mix gently until just combined.

  • Form into 12–14 meatballs and place on a baking sheet lined with foil or parchment.

  • Bake for 15–18 minutes, or until fully cooked through.

2. Heat the Sauce

  • In a saucepan over medium heat, add the marinara, garlic powder, basil, and red pepper flakes.

  • Simmer for 5–10 minutes. Once meatballs are done, add them to the sauce and coat well.

3. Toast the Rolls

  • Slice rolls open and lightly brush with olive oil or butter.

  • Toast in the oven or on a skillet until golden and slightly crispy.

4. Assemble the Subs

  • Place 3–4 meatballs in each roll, spoon over extra sauce.

  • Sprinkle generously with mozzarella and a bit of Parmesan.

  • Toast in the oven for 5 minutes or until cheese is melted and bubbly.

Serve With:

  • Crispy potato chips or a simple side salad.

Tips:

  • For extra richness, add a smear of garlic butter inside the buns before toasting.

  • Spice lovers can add more red pepper flakes or a drizzle of hot sauce.
