Creamy Parmesan Italian Sausage Soup Recipe

Ingredients:

  • 1 lb Italian sausage (mild or spicy, depending on your preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 cups baby spinach
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 medium potatoes, diced small (optional, for added thickness)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1-2 tablespoons olive oil for cooking

Instructions:

  1. Brown the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into crumbles as it cooks. Remove the sausage from the pot and set aside, leaving any drippings in the pot.

  2. Cook the Vegetables: In the same pot, add the diced onion and cook for about 3-4 minutes until translucent. Add the garlic, red and yellow bell peppers, and potatoes if using. Sauté for another 5 minutes until softened.

  3. Add Broth and Tomatoes: Pour in the chicken broth and add the can of diced tomatoes with their juices. Stir in the Italian seasoning and bring the mixture to a simmer. Cook for 10-15 minutes, or until the potatoes are tender.

  4. Add Spinach, Cream, and Parmesan: Stir in the spinach until wilted, then add the heavy cream and Parmesan cheese. Return the cooked sausage to the pot and stir everything together.

  5. Season and Serve: Season with salt and pepper to taste. Let the soup simmer for another 5 minutes to allow the flavors to blend and the cheese to melt into the soup.

  6. Serve Hot: Ladle the soup into bowls and top with extra Parmesan cheese if desired. Serve with crusty bread for dipping!
