Chicken Quesadillas

 

Ingredients:

  • 1 can (12.5 oz) canned chicken breast, drained and shredded
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup canned corn (drained)
  • 1/4 cup salsa
  • 1/2 tsp cumin
  • 4 large flour tortillas
  • Olive oil or butter for cooking

Instructions:

  1. In a bowl, mix chicken, cheese, corn, salsa, and cumin.
  2. Heat a skillet over medium heat and lightly oil or butter it.
  3. Place a tortilla in the skillet and spread the chicken mixture over one half of the tortilla.
  4. Fold the tortilla in half and cook for 2-3 minutes on each side until golden and crispy.
  5. Repeat with the remaining tortillas and serve with sour cream or guacamole.
