Ingredients:
- 1 can (12.5 oz) canned chicken breast, drained and shredded
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup canned corn (drained)
- 1/4 cup salsa
- 1/2 tsp cumin
- 4 large flour tortillas
- Olive oil or butter for cooking
Instructions:
- In a bowl, mix chicken, cheese, corn, salsa, and cumin.
- Heat a skillet over medium heat and lightly oil or butter it.
- Place a tortilla in the skillet and spread the chicken mixture over one half of the tortilla.
- Fold the tortilla in half and cook for 2-3 minutes on each side until golden and crispy.
- Repeat with the remaining tortillas and serve with sour cream or guacamole.
